3 ripe bananas mashed
1/2 cup heavy cream
1/2 cup sour cream
1/2 cup unsalted butter melted
2 cups crushed graham crackers
3 (8 oz) packages cream cheese softened
1 cup granulated sugar
1 tbsp lemon juice
1 tsp vanilla extract
3 large eggs
1 cup heavy whipping cream
2 tbsp powdered sugar
1/2 tsp vanilla extract
Fresh banana slices (for garnish)
Instructions
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a bowl, combine crushed graham crackers with melted butter and press the mixture into the base of the springform pan.
- In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
- Add mashed bananas, sour cream, heavy cream, lemon juice, vanilla extract, and eggs to the mixture, then blend until fully combined.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake in the preheated oven for 30 minutes or until set. Allow to cool, then refrigerate for at least 4 hours or overnight.
- Before serving, whip heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form, then spread over the cheesecake.
