Ingredients
1 and 1/2 cups (190g) all-purpose flour
1/2 cup (100g) granulated sugar
1 large egg
8 oz (225g) cream cheese softened
1/2 cup (115g) unsalted butter melted
1/4 cup (50g) light brown sugar
1 cup (150g) fresh or frozen blueberries
1/4 tsp baking soda
1 tsp vanilla extract
1/2 cup (120ml) milk
1/4 tsp cinnamon
1/4 tsp salt
1 egg yolk
1/2 cup (65g) all-purpose flour (for crumb topping)
1/3 cup (70g) light brown sugar (for crumb topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, mix the cream cheese, granulated sugar, and egg until smooth.
- In another bowl, combine melted butter, milk, vanilla extract, and egg yolk; mix well.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the blueberries gently.
- Pour half of the batter into the prepared baking dish and spread evenly.
- Spread the cream cheese mixture over the batter, then pour the remaining batter on top.
- In a small bowl, mix the crumb topping ingredients and sprinkle over the top of the batter.
- Bake for 30-35 minutes or until a toothpick comes out clean. Allow to cool before serving.
Notes
Ensure your cream cheese is at room temperature for easier mixing. If using frozen blueberries, do not thaw them before adding to the batter.
