Instructions

  1. Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a muffin tin with paper liners or grease with a little oil to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine 1 ½ cups of flour, ¾ cup of sugar, 2 teaspoons of baking powder, and ½ teaspoon of salt. Stir these dry ingredients together until well mixed.
  3. Combine Wet Ingredients: In a separate bowl, whisk together ⅓ cup of vegetable oil, 1 large egg, and ⅓ cup of milk. Ensure the mixture is smooth before combining with the dry ingredients.
  4. Combine Ingredients: Gradually pour the wet mixture into the dry ingredients. Stir gently until just combined. It’s okay if there are a few lumps. Finally, fold in 1 cup of fresh blueberries, taking care not to overmix.
  5. Prepare the Crumb Topping: In a small bowl, mix together ½ cup of sugar, ⅓ cup of flour, cubed butter, and 1 ½ teaspoons of cinnamon. Use a fork or your fingers to work the butter into the mixture until crumbly.
  6. Fill Muffin Tins: Spoon the batter evenly into the prepared muffin tins, filling each cup about two-thirds full. Generously sprinkle the crumb topping over each muffin.
