For the Cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

For the Pastry Cream Filling:

  • 1 cup whole milk
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

For the Chocolate Glaze:

  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Prepare the Cupcakes: Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners. In a bowl, whisk together the flour, baking powder, and salt. In a separate bowl, beat together the butter and sugar until fluffy. Add in the eggs one at a time, followed by the vanilla extract. Gradually add the dry ingredients to the wet mixture, alternating with milk, until smooth. Fill each liner about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let them cool completely.
  2. Make the Pastry Cream: In a saucepan, warm the milk over medium heat (do not boil). In a separate bowl, whisk together sugar, egg yolk, and cornstarch. Slowly whisk the warm milk into the egg mixture. Return the mixture to the saucepan and cook, stirring constantly, until it thickens. Remove from heat and stir in the vanilla. Let the pastry cream cool for at least 30 minutes in the fridge.
  3. Fill the Cupcakes: Once the cupcakes have cooled, use a small knife to create a hole in the center of each cupcake. Fill a piping bag with chilled pastry cream, and pipe the cream into each cupcake, filling the hole.
  4. Prepare the Chocolate Glaze: In a heatproof bowl, combine the chocolate chips and heavy cream. Microwave in 20-second intervals, stirring after each, until the chocolate is melted and the mixture is smooth. Let the glaze cool for a few minutes.
  5. Assemble: Spoon or dip the tops of the cupcakes in the chocolate glaze. Let the glaze set for about 10 minutes before serving.
