Ingredients
Scale
- 1/2 cup chopped onion
- 2 tablespoons butter or margarine
- 1 10-ounce can of cream of chicken soup
- 1 1/2 cups milk (or milk alternative for dairy-free)
- 1 lb Velveeta cheese (cubed (or dairy-free alternative))
- 1 10-ounce package frozen chopped broccoli
- Salt and pepper to taste
Instructions
Sauté the Onion:
- Melt butter in a skillet over medium heat. Add the chopped onion and sauté until translucent and fragrant, about 3-5 minutes.
Combine in Crock Pot:
- Transfer the sautéed onion into the crock pot.
- Add the cream of chicken soup and milk, stirring well to combine.
- Add the cubed Velveeta cheese and frozen chopped broccoli.
Cooking:
- Set your crock pot to low. Cover and let the soup cook for 3-4 hours.
- Stir occasionally to ensure even melting of the cheese and to prevent the soup from sticking to the bottom.
Final Touches:
- At the end of cooking, adjust the soup’s seasoning with salt and pepper to taste.
- If desired, blend using an immersion blender for a smoother texture before serving.
