Buffalo Chicken

Ingredients

  • 23 chicken breasts (pounded thin (approximately 1 pound))
  • 3 tablespoons olive oil (divided)
  • 1/4 cup Frank’s hot WINGS Sauce (for more heat or Frank’s ORIGINAL Hot Sauce (for less heat))
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 1 tablespoon honey
  • 1 1/2 teaspoons lime juice

Instructions

Prepare chicken

  1. Pound 2-3 boneless, skinless chicken breasts to ½ inch thick.

Whisk together:

  1. ¼ cup Frank’s hot sauce (WINGS or ORIGINAL)
  2. 2 tbsp honey
  3. 1 tbsp lime juice
  4. 1 tsp each: garlic powder, chili powder, salt
  5. ½ tsp each: ground cumin, smoked paprika, onion powder
  6. ¼ tsp pepper
  7. Marinate chicken
  8. Place chicken in a bag or dish.
  9. Pour marinade over chicken.
  10. Let sit 30 minutes – 2 hours.

Preheat & sear

  1. Preheat oven to 400°F (200°C).
  2. Heat 2 tbsp olive oil in skillet over medium heat.
  3. Remove chicken from marinade (reserve marinade).
  4. Sear chicken 3-4 min per side until browned.

Make glaze & bake

  1. In a small bowl, mix reserved marinade with:
  2. 1 tbsp honey
  3. 1½ tsp lime juice.
  4. Transfer chicken to baking dish.
  5. Pour glaze over chicken.
  6. Bake 20-25 min until chicken reaches 165°F (74°C).

Serve & enjoy

  1. Pair with your favorite sides or a cheesy casserole.
  2. Adjust heat level to taste!
