For the Brownie Base:

  • ½ cup 115g unsalted butter, melted
  • 1 cup 200g granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup 40g unsweetened cocoa powder
  • ½ cup 65g all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder

For the Cheesecake Layer:

  • 16 oz 450g cream cheese, softened
  • ½ cup 100g granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup 60ml sour cream

For the Caramel Topping:

  • ½ cup 120ml caramel sauce (store-bought or homemade)
  • A pinch of sea salt (optional)

Instructions

  1. Preheat the oven to 325°F (160°C). Grease or line a 9-inch (23 cm) springform pan with parchment paper.
  2. Make the Brownie Base: In a medium bowl, whisk the melted butter and sugar until fully combined. Add the eggs and vanilla, mixing thoroughly. Stir in the cocoa powder, flour, salt, and baking powder until just blended. Pour the brownie batter into the prepared pan, spreading it evenly. Bake for 15 minutes, then remove and set aside to cool slightly.
  3. Prepare the Cheesecake Layer: In a separate bowl, beat the softened cream cheese until smooth. Add the sugar and continue beating until creamy. Beat in the eggs one at a time, followed by the vanilla and sour cream. Ensure the mixture is smooth and well combined.
  4. Assemble the Cheesecake: Pour the cheesecake batter over the cooled brownie base. Smooth the top with a spatula. Bake the cheesecake for 40-45 minutes, or until the center is set and the edges are lightly golden.
  5. Cool the Cheesecake: Turn off the oven, leaving the door slightly ajar. Allow the cheesecake to cool for 1 hour inside the oven. Then, refrigerate the cheesecake for at least 4 hours, or overnight for best results.
  6. Serve: Once chilled, drizzle the caramel sauce over the top of the cheesecake and sprinkle with a pinch of sea salt if desired. Slice and enjoy!
