Chicken and Broccoli Lasagna

Ingredients

  • 9 lasagna noodles
  • 4 boneless chicken breasts (diced)
  • 12 oz. bag of frozen broccoli (thawed)
  • 8 oz. shredded mozzarella cheese
  • 1 cup grated parmesan cheese

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C).
  2. Cook the Lasagna Noodles: Boil the noodles per package instructions. Drain and spread out on a kitchen towel.
  3. Prepare the Chicken: In a skillet over medium heat, cook the diced chicken breasts until cooked through, about 7-10 minutes.
  4. Mix the Filling: In a large bowl, combine the cooked chicken, thawed broccoli, shredded mozzarella, and half of the parmesan cheese.

Assemble the Lasagna:

  1. Spread a portion of the chicken and broccoli mixture at the bottom of a baking dish.
  2. Layer with noodles, then repeat the process, finishing with a layer of noodles.
  3. Top with the remaining parmesan cheese.

Bake:

  1. Cover with foil and bake for 25 minutes.
  2. Remove foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
