1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup granulated sugar
1/2 cup unsalted butter softened
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1/4 cup melted butter for brushing
1/4 cup granulated sugar for coating
1 tablespoon ground cinnamon for coating
Instructions
- Start by preheating your oven to 350°F (175°C) and greasing a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set this mixture aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, which should take about 2-3 minutes.
- Add the eggs individually, mixing well after each addition, then stir in the vanilla extract.
- Gradually fold in the dry ingredients to the wet mixture, alternating with the buttermilk, starting and finishing with the dry ingredients. Mix until just combined.
- Pour the batter into the prepared loaf pan, smoothing it out evenly.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- While baking, mix the 1/4 cup of sugar and 1 tablespoon of cinnamon in a small bowl.
- After baking, cool the bread in the pan for about 10 minutes before transferring it to a wire rack.
- While it’s still warm, brush the top with melted butter and generously sprinkle the cinnamon-sugar mixture over the top.
