Instructions
- Preheat your oven to 350°F (175°C) and prepare two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, cream cheese, and sugar until the mixture is light and fluffy, around 3-5 minutes.
- Incorporate the egg and vanilla extract, mixing until the batter is smooth.
- In another bowl, whisk the flour, baking soda, and salt together.
- Gradually mix the dry ingredients into the wet mixture, stirring until just combined. Expect a soft but workable dough.
- Scoop tablespoon-sized amounts of dough, roll them into balls, and space them 2 inches apart on the baking sheets.
- Gently flatten each cookie with the bottom of a glass or your fingers. Optionally, sprinkle with colored sugar or sprinkles.
- Bake for 8-10 minutes, or until the edges are lightly golden. The centers may be soft but will firm up as they cool.
- Allow the cookies to cool on the baking sheets for a few minutes before moving them to a wire rack to cool completely.
