Indulge in these irresistible Gooey Chocolate Peanut Butter Cupcakes—rich, chocolaty, and filled with a creamy peanut butter surprise. Perfect for any occasion!

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 1/4 cup hot water
  • 1/2 cup peanut butter
  • 1/4 cup powdered sugar
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. Combine wet ingredients: In a separate bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract, mixing until fully combined.
  4. Add liquids and dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with milk. Once everything is incorporated, stir in the hot water. The batter should be smooth and slightly runny.
  5. Prepare peanut butter filling: In a small bowl, combine peanut butter and powdered sugar. Stir until smooth and creamy, then roll the mixture into 12 small balls.
  6. Fill cupcake liners: Spoon a bit of batter into each cupcake liner (about halfway full). Place a peanut butter ball in the center of each, and cover with more batter, ensuring the peanut butter ball is hidden inside.
  7. Top with chocolate chips: Sprinkle a few chocolate chips on top of each cupcake for extra richness.
  8. Bake: Place the tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the edge comes out clean. The center may remain slightly gooey due to the peanut butter filling.
  9. Cool and serve: Let the cupcakes cool in the tin for a few minutes, then transfer to a wire rack to cool completely. Serve once they have cooled slightly and enjoy the gooey peanut butter surprise inside!
