- ½ cup 1 stick butter, melted
- 1 cup all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 1 cup sugar
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 21– ounce can lemon pie filling
Instructions
- Preheat your oven to 350°F (175°C).
- Place the stick of butter in the 9×9-inch baking dish and melt it in the oven for about 3-4 minutes. Remove from the oven and set aside.
- In a medium bowl, combine the flour, baking powder, and salt. Whisk to combine.
- Add the sugar, then buttermilk, vanilla extract, and lemon extract to the dry ingredients. Whisk everything until just combined. Don’t overmix!
- Pour the batter over the melted butter in the baking dish. Do not stir. The butter will stay on the bottom and create the cobbler’s unique texture as it bakes.
- Spoon the lemon pie filling over the batter, spreading it evenly.
- Bake for 45-55 minutes, or until the edges are golden brown and the cobbler is bubbling.
- Let the cobbler cool for 10-15 minutes before serving. Enjoy warm with a scoop of ice cream or a dollop of whipped cream.
