Ingredients

  • 4 cups shredded green cabbage
  • 2 cups shredded purple cabbage
  • 1 ½ cups corn kernels (fresh, canned, or thawed frozen)
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ¼ cup fresh cilantro (chopped)
  • ¼ cup crumbled cotija cheese
  • 1 jalapeño (finely diced (optional))
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 1 clove garlic (minced)
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

Prepare the Corn:

  1. If using fresh corn, grill or sauté until lightly charred. Let it cool before removing the kernels.
  2. If using canned or frozen corn, drain and pat dry.

Make the Dressing:

  1. In a small bowl, whisk together mayonnaise, sour cream, lime juice, garlic, chili powder, smoked paprika, salt, and pepper until smooth and well combined.

Assemble the Slaw:

  1. In a large bowl, combine the shredded green cabbage, purple cabbage, corn, cilantro, and jalapeño (if using).
  2. Drizzle the dressing over the slaw and toss everything together until evenly coated.

Finish and Serve:

  1. Sprinkle crumbled cotija cheese on top before serving.
  2. Serve immediately or chill for up to 30 minutes for enhanced flavor.
