- 4 cups shredded green cabbage
- 2 cups shredded purple cabbage
- 1 ½ cups corn kernels (fresh, canned, or thawed frozen)
- ½ cup mayonnaise
- ¼ cup sour cream
- ¼ cup fresh cilantro (chopped)
- ¼ cup crumbled cotija cheese
- 1 jalapeño (finely diced (optional))
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- 1 clove garlic (minced)
- Juice of 1 lime
- Salt and pepper to taste
Instructions
Prepare the Corn:
- If using fresh corn, grill or sauté until lightly charred. Let it cool before removing the kernels.
- If using canned or frozen corn, drain and pat dry.
Make the Dressing:
- In a small bowl, whisk together mayonnaise, sour cream, lime juice, garlic, chili powder, smoked paprika, salt, and pepper until smooth and well combined.
Assemble the Slaw:
- In a large bowl, combine the shredded green cabbage, purple cabbage, corn, cilantro, and jalapeño (if using).
- Drizzle the dressing over the slaw and toss everything together until evenly coated.
Finish and Serve:
