Instructions
- Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prepare for baking.
- In a mixing bowl, combine the peanut butter, Greek yogurt, honey or maple syrup, and vanilla extract. Mix these ingredients until they form a smooth and creamy blend.
- Gradually add the oat flour, baking powder, and salt to the mixture. Stir until all components are well incorporated. If you’re using chocolate chips, fold them in now.
- Use a spoon to scoop out the dough and form balls. Place these dough balls on the lined baking sheet, making sure to leave some space between them as they will spread slightly during baking.
- Bake the cookies in the preheated oven for 8 to 10 minutes. You want them to be set around the edges while keeping the centers soft.
