Indulge in a rich and decadent Rocky Road Brownie Cake, packed with chocolate chips, mini marshmallows, and crunchy pecans. This delightful dessert combines the chewy texture of brownies with the classic flavors of Rocky Road.
Ingredients
1/2 cups heavy cream divided
1/2 cups granulated sugar divided
1 tsp salt divided
1/2 cups mini marshmallows divided
3 cups all-purpose flour divided
1/2 cups chopped pecans divided
6 large eggs divided
3/4 cup cocoa powder divided
1 1/2 cups chocolate chips divided
2 tsp vanilla extract divided
1/2 cup dark chocolate chopped divided
1 tsp baking powder divided
1/2 cups unsalted butter divided
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, melt 1/2 cup of unsalted butter and mix it with 1 1/2 cups of granulated sugar. Stir in 2 teaspoons of vanilla extract.
- Add 3 of the large eggs, one at a time, mixing well after each addition.
- In another bowl, sift together 3 cups of all-purpose flour, 3/4 cup of cocoa powder, 1 teaspoon of baking powder, and 1 teaspoon of salt.
- Gradually add the dry ingredients to the wet mixture, alternating with 1/2 cup of heavy cream, until well combined.
- Fold in 1 1/2 cups of chocolate chips and 1 1/2 cups of chopped pecans.
- Pour half of the batter into the prepared baking pan and smooth it out. Sprinkle with 1 1/2 cups of mini marshmallows.
- Pour the remaining batter over the marshmallows and dollop with 1/2 cup of chopped dark chocolate.
- Bake for 30 minutes or until a toothpick inserted in the center comes out with moist crumbs.

Notes
For a more intense chocolate flavor, you can substitute some of the cocoa powder with melted dark chocolate.
