For the Coating

  • 1 cup melted white chocolate chips
  • ¼ cup crushed freeze-dried raspberries

Instructions

  1. Make the Cheesecake Filling: In a large bowl, combine the cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  2. Add the Raspberries & White Chocolate: Stir in the mashed raspberries and melted white chocolate chips until everything is well combined.
  3. Fold in the Graham Cracker Crumbs: Gently fold in the graham cracker crumbs until you have a thick, dough-like mixture.
  4. Shape into Balls: Using a spoon or cookie scoop, form the mixture into bite-sized balls (about 1 inch in diameter). Place them on a parchment-lined baking sheet.
  5. Freeze the Cheesecake Balls: Freeze the balls for at least 30 minutes to firm them up.
  6. Prepare the Coating: In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring after each, until smooth and glossy.
  7. Coat the Cheesecake Balls: Dip each cheesecake ball into the melted white chocolate, ensuring it’s fully coated. Place them back onto the parchment paper and let any excess chocolate drip off.
  8. Decorate: Sprinkle the crushed freeze-dried raspberries on top of each ball while the chocolate is still wet.
